Cheeseburger Sausage Roll
Sausage Roll filling:
- 600g Beef mince
- 4 dill pickles finely diced
- 4 rashers of smoked streaky bacon
- 1/2 white onion thinly diced
- 4x American Cheddar cheese slices. Cut vertically to make 4 more slices per piece.
Burger Sauce:
- Hellmans Mayonnaise
- Dijon Mustard
- Dill pickle brine
- Cayenne pepper
Our secret to great tasting burgers is really fresh meat. Get down to your local butcher on the day you decide to make these and ask for an 80% chuck and 20% short rib mince to get that “beefier” flavour.

- 1/2 Cup Hellmans Mayonnaise
- 1 tablespoon Dijon mustard
- 3/4 teaspoon ketchup
- 1/4 teaspoon dill pickle brine
- A pinch of cayenne pepper
- Mix it all together
Once you have your sauce, you’re all ready to go and it’s time to start assembly.
Layout your pastry and add 1 of the quartered pieces of cheese to the bottom. Then top with a generous amount of beef, bacon, finely diced onion, and pickles. Lastly top with some of your burger sauce and American mustard then finish with a quartered slice of cheese. Repeat this process for as many as you need.
